For Christmas my husband bought me a pressure cooker. Some might be offended by kitchen appliances as a gift – but I LOVE new things for my kitchen. We are definitely running out of room up here. There are so many kitchen tools that can save you time and money, and we would say the pressure cooker is one of them.
Although it can be a little intimidating and you should be careful to follow directions when using one, a pressure cooker can make you an amazing meal in a quarter of the time (maybe less). You can purchase inexpensive cuts of beef or pork and in less than an hour have a meal you would pay a high price for at any restaurant.
We always test the pressure cooker recipes on Sunday. It’s a day we can have a little extra time if something goes wrong and we have to open it up, cool it down and reset it. It also gives us a chance to investigate recipes and create a dish we want to eat. Lately we have been kitchen testing braising beef in wine, mmmm… here is the recipe we came up with. You need a little carb with this meal, I LOVED it served over gnocchi – but feel free to serve with some low FODMAP bread, or on top of some rice, quinoa, or another gluten free noodle!
Low FODMAP Recipe: Pressure Cooker Braised Beef
3 lbs beef (inside round), cut into 1 1/2 inch cubes
2 cups carrots, chopped
2 cups parsnips, chopped
1 stalk celery, chopped
1 cup fennel, chopped
2 cups red wine
2 cups low sodium chicken stock (onion and garlic free)
2 tbsp thyme
1 tbsp rosemary
2 bay leaves
1 pack of gnocchi (gluten-free)
4 cups kale, diced
Using the pressure cooker as a pot on the stove, heat to medium-high heat and brown meat. Do not turn the meat until it releases from the pan – forcing the meat off the pan will prevent it from browning properly. Brown in batches as necessary.
Deglaze the bottom of the pot with red wine and then add all ingredients to pot.
Place lid securely on top of pressure cooker pot. Heat on high until steady stream of steam is released and then turn down heat to medium-high. Cook for 40 minutes.
Meanwhile, cook gnocchi according to package directions.
Release steam from pressure cooker slowly. When there is no more steam, remove lid.
Add in 4 cups of chopped kale to pot, mix in well. Let heat for 5 minutes.
Serve over 3/4 cup of gnocchi and top with parmigiana cheese if desired.
